Ingredients: 8 oz package tempeh, crumbled 3⁄4 cup mango, diced 1⁄2 cup cucumber, chopped 1⁄4 cup roasted cashews, roughly chopped 1⁄4 cup mint leaves, chopped 8 lettuce leaves 1 tbsp grapeseed oil 2 tbsp hoisin sauce 1 tbsp lime juice
Place a skillet with grape seed oil over medium-high heat. Add the tempeh and cook for 3-4 minutes.
Add the hoisin sauce and lime juice and stir it well. Remove and set aside.
Place the individual lettuce leaves on your working surface. Evenly divide tempeh, chopped mango, cucumber, cashews, and mint leaves. Serve!
