Jackfruit Vegetable Fry

Ingredients: 2 small onions, finely chopped 2 cups cherry tomatoes, finely chopped 1/8 tsp ground turmeric 1 tbsp olive oil 2 red bell peppers, seeded & chopped 3 cups firm jackfruit, seeded & chopped 1/8 tsp cayenne pepper 2 tbsp fresh basil leaves, chopped Salt, as needed

Directions:

  1. Sauté the onions plus bell peppers in a greased skillet for 5 minutes. Add the tomatoes, stir and cook within 2 minutes.

  2. Add the jackfruit, cayenne pepper, salt, and turmeric and continue to cook for 8 minutes. Garnish with basil leaves and serve warm.
